Ive been offered an old syvecs S8 but i was wondering is it find to just have it updated to the latest software etc or would it need sending back for refurb

As far as I know, you should be able to update an S8 to latest without sending it back. Only issues I've personally come across with older S8's is customers who didn't realise the version they bought didn't have (for example) drive by wire included.

I'm sure a lot will depend how old and what spec it actually is ?

Maybe with the serial number someone can tell you.

And do you need any "upgrade" features ?

Old units do hold their value well with most good ecu's.....sort of makes buying new more sensible so you get the latest and greatest versions, with warranty
They'll always be a great long term investment for your car anyway
